How is your weekend going so far? Did you try my 10 awesome tips for the best weekend ever? If you missed my post yesterday about having an awesome weekend, please read the previous one about my 10 tips for mommies on how to boost energy and recharge yourselves to feel new on Monday morning.
It’s noon on Sunday and my family is craving something tasty, healthy and light. So I decided to make Shrimp Cucumber bites that are perfect appetizers to enjoy on a sunny Sunday afternoon.
INGREDIENTS
FOR THE SHRIMP
1/3 c. extra-virgin olive oil
1/4 c. lime juice
2 tbsp. honey
2 cloves garlic, minced
1 tsp. cajun seasoning
1 lb. shrimp, peeled and deveined, tails discarded
FOR THE GUACAMOLE
2 avocados
2 tbsp. lime juice
1/8 spoon cayenne pepper
You can also add chopped tomatoes or red onion. It’s your choice
2 cucumbers, sliced 1/2″ thick
Direction:
In a large bowl, combine oil, lime juice, honey, garlic, and Cajun seasoning. Season with salt. Add shrimp and toss until fully coated, then cover and leave for 10 minutes.
In a large skillet over medium heat, cook shrimp until pink about 2 minutes per side. Remove from heat.
In a medium bowl, mash avocados. Add lime juice, red onion, tomatoes, some herbs, cayenne pepper and stir to combine. Season with salt.
Chop cucumber 1/2” thick, spread with guacamole each piece of cucumber and top each piece with tasty shrimp and garnish with cilantro or dill.
