Who does not love sweets? I do not know anyone who can resist a delicious piece of apple pie with a cup of morning tea or coffee.
It’s a beautiful sunny day in Valencia and I caught myself that I am craving my favorite apple pie from my childhood.
I remember waking up almost every Sunday with the smell of apple pie that would come from the kitchen. My mom was always cooking and baking delicious goodies while singing a quiet tune.
Ah, I sure do miss these memories, but I am so happy I inherited this recipe of apple pie to be able to bake it for my family now.
I do not bake this amazing pie every Sunday, but this morning I missed the smell and taste so much that I decided to make it before my son comes home from school. I cant wait to surprise him!
Here is the simple recipe:
Ingredients:
4 eggs
1 cup of sugar
1 cup of flower
4 green apples
Direction:
Preheat Oven to 340˚F. Peel and remove core from the apples. Cut into small pieces.
Lay apple small pieces on a bottom of a greased baking pan.
Using electric stand mixer, beat 4 eggs with 1 cup sugar on high speed for 6 minutes until thick and fluffy.
Whisk together 1 cup flour with a pinch of baking powder. Sift the flour into the foamy egg mixture in three increments, folding it in with a spatula to combine between each addition.
Transfer batter to a greased baking pan covering all the apple pieces. And sprinkle the top with reserved apples and bake it for 45 minutes.
Remove from oven and let cool in the pan for 15 minutes then you can slide a knife around the sides of the cake to loosen it from the pan. Once cake is near room temp, dust with powdered sugar and serve.
